Chickpea Nourish Bowl

Plant power! Nourish yourself with this incredible looking Chickpea Bowl featuring our Nacho Cheese seasoning.
Prep time: 15 minutes
Cook time: 10 - 15 minutes
- ½ cup cooked quinoa
- 1 can chickpeas, drained
- A generous sprinkling of Deliciou Nacho Cheese seasoning
- Mixed salad leaves
- 1x roma tomato quartered
- ½ cucumber
- ¼ red onion thinly sliced
- A drizzle of olive oil
- ½ cup vegan mayo
- 1 avocado, thinly sliced
- Cilantro/coriander and lemon for garnish
- In a bowl, mix chickpeas and a good sprinkle of nacho cheese seasoning. Mix until evenly coated.
- Spread seasoned chickpeas on an oven tray and bake in the oven at 180 degrees until slightly golden. Remove and set aside.
- In a salad bowl, mix together salad leaves, tomato, onion and cucumber. Add a dash of olive oil and lemon juice. Toss the salad to combine.
- In a serving bowl, layer cooked quinoa, salad, avocado and roasted chickpeas. Drizzle with vegan mayo and dress with cilantro. Serve immediately and enjoy!
